Yums #1: Super Sticky Salmon

If I had to pick a signature dish for Yan and the Yums, it would be Super Sticky Salmon, so it makes sense that this would be the opening number. This is the recipe that everyone asks for after they've had it - and the best part is that it's so easy and simple to make, but it's still healthy and delicious at the same time. 

The secret to this recipe is the sticky sauce - the gooey consistency is absolutely perfect for flavouring and 'basting' the salmon in. You can absolutely personalise the sauce to suit yourself - substitute the peanut butter for any other nut butter or even tahini, add spices like paprika and cajun or go spicy with lots of chilli and sriracha - but the basis is the same. 2 parts hoisin sauce and nut butter; 1 part dark soy sauce, honey and olive oil to make sure the stickiness is just right. I've found this concoction to offer the sauciest, stickiest and most aromatic flavours that really complement the flakiness of the salmon. 

The most important thing about this recipe is that it's baked in a foil tent. The reason? We don't want the honey in the sauce caramelising and burning the whole dish. It's honestly as easy as putting the salmon on the foil, smearing the stickiness on and then scrunching up the ends and crimping the top to ensure that it's wonderfully sealed and won't go burning - although even if it does, it's nothing to worry about, as the crispness doesn't marr the flavours in any way. 

This is perfect for a weeknight dinner or a fancy lunch, and will be especially welcome if you've got guests coming that you want to impress. The timing of this dish is fantastic, as you can easily rustle up a stir-fry and cook some rice, or whip up a simple salad in the half an hour it takes to cook. This even works on frozen salmon (the ones you find in individual packets), meaning that it tastes far more extravagant than it costs - just make sure to adjust the cooking times according to the instructions given.
